Lallemand Wildbrew Philly Sour is a dry yeast that produces a mildly sour and relatively clean-tasting sour beer. It requires patience as the first day will be dedicated to lactic acid production, so airlock activity won't occur until day 2 or 3. However, it completes the full ferment within two weeks and produces a professional tasting sour. Although there were complaints about the yeast not performing to expectations or stalling, additional batches worked after the stalled ones. The yeast has received a lot of positive reviews and recommendations for producing a great Berliner Weiss and gose beer.
